Young Moms

Young Moms is a creatively-named um, club?, group?, loose alliance?, of young moms (mostly college-educated SAHMS) who live in SoCal and go to the same conservative Episcopal church. We meet in the park every week so the kids can run their wiggles out and we can talk to people who form sentences with more than three words. And now we blog together too!

Quick, easy, healthy recipe

Crock Pot Lentils and Sausage

8 oz dried lentils, rinsed but not soaked
15 oz can diced tomatos, drained
2 carrots, chopped
2 celery stalks, chopped
chopped onion, if desired
2 cups beef broth
1 to 1 and 1/2 cups water
1 lb kielbasa sausage (pre-cooked - ready to eat) cut into half-wheels

Toss everything in a crock pot and cook on low for 6-7 hours. Stir well and serve!

This was very new to me - lentils aren't something I've eaten much of - but it was REALLY good! And it is a balanced meal, and it really only costs about $4 for the whole pot. You should all try it. :)
