Healthy, easy dinner
Chicken veggie soup
Boil chicken in just enough water to cover it. (I used a 3 quart pot and about four "tenders" of chicken.)
When done, take chicken out and cut up in bite sized pieces.
Add chicken broth base to water (to taste), or I imagine you could use salt and spices instead.
Add one onion, chopped, and two carrots, chopped.
Boil until almost tender.
Add about 14 ounces of crushed tomatos and the chicken chunks.
Simmer until ready to eat.
I served this with green beans and whole wheat muffins. Healthy, easy, yummy. :)
